The question arose in my head & I wasn't able to find any info via Internet. Basicly aside from parents & family color markings for sables. As picking an 8 week old puppy is there any way to tell if they will be the dark color or light color ? With them changing so much. Or is it a complete roll of dice ? Obviously my desire would be the dark dark color when he's an full adult male. Any info will help ! Thanks.

In my experience, many of them will mature out at the approximate color they were at birth. If they were very dark at birth, they will probably
be very dark as adults and the other way around.

Melissa is right.. Most of the time this is true, never seen it not turn out this way in sables.

My sable male Sam http://www.pedigreedatabase.com/dog.html?id=625199 was nearly all black when we got him at 8 months. If you look at his current photo you will see that he looks alot like a classic black and red GSD, but he is a sable. I had hoped he would be a near all black sable but it soon became clear as he got older he was getting lighter. He is now 3 years old so his color is funished changing. And the funny thing is that the breeders called the pups "black sables". Plus Sam was the darkest pup they had, so I'm sure all the others from the litter are even lighter than him.

Both sables and B&Ts change color as they mature. As stated above, their birth color is typically what they would have, when they mature.

Just curious : Why ? and why do you think your preference is 'obvious' ?

Here is my explanation.
SABLE COLOR:
Dogs have 2 types of hair. Overcoat and Undercoat. Sable dogs have over and under coat of different color. The overcoat is of usually of black color and you can observe where the black is going to eventually develop by observing the black hue on older pups. The undercoat is of different color like red, brown, grey and so on. Please keep in mind that there is no such thing as black sable that would mean that over and undercoat would be both black and thus such dog is SOLID BLACK.
Please keep in mind that sable pups that get born dark, that is as dark as they will be eventually. Than they will get lighter as they mature since at that time all you see is the undercoat. Pups will get darker as they mature and black overcoat will appear .That will happen around 1-3(!!!) years. In order to estimate the color of your pup you must look at the parents and grandparents and not at the pup since there you can see only the undercoat (puppy coat) .
Please also keep in mind that color is not important and that GSD should be selected by temperament and structure and not by color.
