I am in the process of choosing my kennel name. I want to incorporate my last name. So, if anyone can translate these two ideas I have into German, I would surely appreciate it.

"Schäferhunde vom Haus Gray" if Gray is your name and you don't want to translate your name - or if you want to translate gray - grau - it could be:
"Schäferhunde vom Haus Grau" .
If you say "vom grauen Haus" it means from the gray (as in colour - the gray house) house. If you say "vom Gray Haus" or "vom Haus Gray" you include your name; but if you want to translate your name (Gray) into German (Grau) and call your house "House of Gray" you could use captial letters in both words and translate: "vom Grau Haus".
