O.K.   from what I understand the longcoat gene is recessive, which means that both the mama dog and the daddy dog must "through" that gene for a puppy to be longcoat.   So that puppy would have 2 longcoat genes.   So if I breed 2 longcoats, would the puppies not HAVE to be longcoat since both dogs involved ONLY have the longcoat gene?  If I am wrong, would you guys please explain it to me?  Thanks and hope to hear from lots of you!

You are correct, two long coats bred together can only produce long-coated puppies.
