I would buy the bike that beetree posted. I have seen people run dogs with those, no problem. The trike bothers me, because the dog can easily get in front of the wheel.

Good for you :)
I bet if you got a basket with a top on it your cat would enjoy the ride.
Does your dog heel well? If so, then all you really need is a good leash and maybe a pinch collar. IMO those bike with your dog products are just unnecessary gimmicks to spend money on.
Before I started training Cisco for the AD, I would take him into Lowes with me and make him heel beside the cart. Occasionally, he would get his toes clipped because he was either not paying attention or forging. He learned to respect the cart very quickly.  I think it helped him when we started heeling beside the bike.
Also, I would consider a Recumbent bike instead of a trike. I have a friend who only has one hand and she bike with a recumbent (kinda like the one Bee posted)......much safer than a trike.

Thank you Cheri! That bike looks interesting. My only qualm is that I'd like to be able to see/test that thing out in person before buying it. I actually think that would be something my grandma would like - I wonder if the arms move too? She has been taking steps to get into a better physical condition as well, but she has to drive to the gym to do it... and her favorite machine is something very similar to this!

I was thinking about doing the same thing but on my mountain bike and maybe start conditioning my female for her AD.  I have a friend that takes his dog biking all the time using the Ruffwear Roamer leash (similiar to bungee cord and connects to your waist).  I bought one but haven't tried it out...yet.  Good luck.  Great exercise for you both!
