Without actually seeing your dog or knowledge of the bloodline I would like to let you know that some of the behaviors are traits that I like to see in my working puppies. The biting of the jeans as you walk, biting anything that moves, ect ect. are all traits of a pup with prey drive. I could suggest two ways to solve the problem. Also please understand that when you but a working breed you may get some of the working traits. These traits can be overwhelming for the undereducated.
1. Buy a tug toy and give him an outlet.
2. Do a lot of obiedience. This may squash any prey drive he has.

much like in a relationship, somethngs that we may consider faults later, are often the character traits that caused us to take up the relaitionship. It is up to you to manage the relationship. Use the prey drive to elicit the desired behavior by using "rewards".
One thing I've done is that if I "discipline" my young dogs, I do so much like their mom would. Short and in the moment of the transgression. Believe it or not, they do have a sense of what is fair and proportionate.
