 Dosen't sound like anything a crate, pinch collar, and knee can't fix in 15 min.

Like many have said, this appears to be a training issue.  You can do this but this not novice training,  You are going to have serious pack issues. especially with the 3 and 5 year old.  Pesonally I don't leave my 8 year old sch. dog in the room alone with my 3 and 4 year old.  If I leave the room the dog or the kids come with me. This way I KNOW an accident will not happen.  The counter food eating thing is right out the window.  A dog will take over and run your house if you allow them to do so and thats any breed.  The only thing that leads me to think the dog may have some fear biting issues, is its, american show line pedigree. Inferior breeding related to health and work with enphasis only on asthetics albeit against the FCI standard.

If the dog pisses and craps inthe house it is your fault not the dogs fault.  The sooner you take responsibility for that the sooner the dog will not piss and crap in the home.  Find out how to use the crate.  This pup may need down time away from all of the new people.
