One of those dark sable puppies does look very dark, but the puppy I have is much blacker, it is in fact jet black apart from those areas I mentioned...

It's interesting that the changes in color you are describing are the same color changes blk/tan puppies go through except obviously the color is tan that comes through.  My blk/tan pup the blk started changing to tan in the same places.  Behind ears and neck, line up the front legs, under belly and behind back legs.  A true solide blk should not be lighter in these areas.

I did a rescue transport for a female while I was in the Carolinas.   Her color pattern was similar to this but I also thought there was a possibility she had some other-than-GSD-blood in her.  Her body was a bit more compact, toward a Spitz-type maybe and her facial features were a bit finer.  But she was also young so I wasn't 100% sure (I think I may have a pic, I'll look for it).  Someone else told me that this would be a "true" black sable, if she actually was pure GSD and that most of the darker sables would actually be red sable.  It confuses me, expecially when something different comes along.  I'm not sure what it is but it certainly is pretty.

I have blacks, some turn out to be solid black and some have gold fur showing between toes and back of legs as they get older and grow their adult coat. - but so slight that they still appear solid black on most photographs. This can happen even when both parents are definate solid blacks.
I dont mind either way - just the way the 'cookie crumbles'!

Looks to me like it will be a very dark sable.  I don't know if it is just the picture, but the blk does not look jet blk it looks like it has underlying  color.  Also, some puppies take a long time to change colors.  My blk/tan is 11 1/2 months and still changing colors every day.  I think if they have dark pigment it could take longer to change colors.  I think you'll get more of that tan color in.
When my puppy started changing colors the tan was very very light as it was coming in and the more it came in the darker it got. 
Now her tan is vey dark now .

German Shepherd come in 4 colors black, blk & tan, blk & silver, or sable
Your pup if obviously not solid blk so it must be sable.

Um, they come in white too. They come in lots of colors that aren't permitted in the show ring.

exactly, that is one of the things I was wondering. The puppy I orginally wrote about is jet black apart from back of the neck and the shoulder stripe (the pattern is similar to the adult dog shown in the photo above, but while that dog is a dark brownish colour, the puppy I am talking about is very black). So in a show will this be considered as a fault?

I don't think it would be considered a fault, but I'm no expert.  As long as the color is not faded and I don't think that would be considered faded black.  Very dark sable, I suppose.
