Texasdeb. If you are going to train your dog for non sport protection make sure that you do not get stuck in training which targets equipment instead of a man. For' "real" protection you need civil protection. Civil refereeing to equipment ( uniform) not being present Thus no uniform = civil. 
Also make sure that the dog training is void of any undesirable/improper  associations. Like motions of the decoy, area, equipment and other unwanted / improper associations which some so called protection  dogs need in order to get into protection mode. 
The only proper  association in command attack  necessary for triggering the dog is the command. ( There are other situations where dog needs to act on his/her own=non command attack) You dog should attack anybody anywhere at any time strictly by your command. 
There are these type of associations:
Proper,
improper, 
supportive. 
This is a complex issue and you need a trainer who knows what he is doing. To find one is another issue.

@Red Sable,  thanks so much, Gunther is really a great guy. He is loving, and talkins to me often. He does that weird kind of whining talk sound that GSDs do when they are happy and playing. He also   immeidately runs to me (if he is out) when I come outside and walks/herds me . He takes my hand or wrist in his mouth like he is walking me along. It is a little odd as in the other GSDs I have had none did that particular thing. He is friendly with hubby & son, but makes it clear who his "alpha" dog is. I love him so much, he has taken my mind a little away from my recent loss. I had a Gt Dane (Max) who recently passed at age 9 (I posted about him in All Breed thread under My Heart is Breaking). Gunther is making the loss a little more palatable.

@Prager: Thanks for the good advice. I will begin the hunt for a good knowledgeable trainer. Gunther will be 1 yr old Dec 31 (coincidentally my wedding anniversary). Any thoughts on what criteria I should use in looking & selecting the right trainer fr Gunther and me?

Ask the trainer how does he make dog to be civil rahter then sport type sleeve dog. And liste and make notes then you can ask here what people think.
Ask 1000 people and then make up your mind.

prager question tho? dont these type of dogs naturally target the man rather than the equipment?
