I have 2 SL GSDs, both of whom are black and tan - although Yiannis is so much lighter than Zane sometimes I'd consider him to be black and yellow.
I also have 2 WL dogs. Jenzi is black/gold sable, althuogh seems to be more black than anything else recently.
Koda is what I would consider to be black and tan but I've been told he is a bi-colour. His body and head are completely black but his legs (from the elbows at the front and knees at the back) are tan coloured. He doesn't have the pencil markings on his toes which I thought was a pre-requisite for a bi-colour (stillnew to thi so am probably wrong).
I love the sables most, particularly the reds. When I picked up Koda though, I deliberately didn't ask about his colouring or appearance. I went purely on his character, temperament and ability to work along with whether he'd be a good match for the level of training etc that I'd be doing with him.
hving said that, I love all my dogs to pieces. I love them all the same amount but for different reasons, their different characters, their little foibles etc
I'm not that keen on pure black or pure white white but I have a friend who has a white GSD. He doesn't look like a bottel ofmilk thugh, he's more of a pale champagne colour.

Sable dogs making up the majority of working line dogs is actually testament to the fact that working line breeders in general are breeding for working ability, drive, and temperament first and foremost. Also there is nothing wrong with likeing one color over another, so long as that is not the determining factor, I prefer a pure black dog and so long as the drives are good and the pedigree is solid hell I am dropping big money on the deal as it is might as well get the dog I want. However when it comes to dog breeding versus dog buying then it becomes essential to be color blind.

Thats the sable color I prefer, but its difficult to come by. Most of the dark sables have a grey undercoat, she has a tan one with a deep dark brown top coat, with black mixed in.
