I recently shared this recipe on Facebook, because my old neighbor and good friend gave it to me back in the early 80s and it fast became one of my favorites.  It's made with ingredients that are pretty much stock, so if you have some fruit and ice cream on hand, you'll always have a scrumptuous dessert, ready in an hour!

My friend died from pancreatic cancer one year almost to the day that I had last seen her, when I was on my road trip.  She owned a mansion/plantation in South Carolina that she had at one time run as a Bed & Breakfast.  She was a special kind of person, the kind you don't often come upon, let alone honored enough to be called their friend.  She was originally from Mystic, Connecticut and landed here when her husband got a transfer.  I think of her every time I make this and that is very often.  It's not fat free, but what good dessert is?

I hope some of you make it and enjoy it as much as I have for close to 4 decades.  Enjoy!

Nola's Quick, Easy Cobbler

1 stick salted butter, no substitutes!

1 cup pure cane sugar (no beet sugar!)

3/4 cup flour

3/4 cup milk

2 tsp. baking powder

1/4 tsp. salt

2 to 3 cups sliced fruit, any kind, any combination!

Melt butter in glass baking dish or souffle dish.  Mix dry ingredients with milk and pour over butter.  DO NOT MIX!

Spread fruit evenly, dropping into dish.  DO NOT MIX!

Bake at 350 for 50 minutes to 1 hour until crust is dark golden and bottom is bubbling.

Serve hot from the oven with vanilla bean ice cream
