What I see here at the shelter so I see alot.
Stools soften here when there is the following:
Change of feed.
heavily color dyed feed.
Antibiotics used, or rescently used.
typically we try to correct with a round of Probios and have had excellent results.

There are many reasons and ingredients that can cause softened stool. The first and most important reason is the GI system of the GSD itself. If your dog has soft stool, especially if it is light colored, this is an indication that it can not digest the food it is being fed. The question then becomes is it really the food or the dog.
Too much fat in a food can cause this. Some ingredients cause it, but again, the most common reason is the GI tract of the dog.
Antibiotics should not be causing soft stool if they are correct for the dog and if necessary, yogurt or something with replacement bacteria is being fed. In humans this is also the case. If you get loose stool on antibiotics, call your doctor.

is there any special ingredients or food to make the stool become more hard ?

There are products such as beet pulp added to many feeds to relieve the hard stools caused by the fillers.
It works out well for the manufacturers since they can sell you even more food that your dog does not need. Dogs who have consumed low potency (high filler) feeds for years take considerable time to fully adjust to high potency. They will likely have loose stools, feel hungry (being accustomed to 5X the volume) and might need adjustments to avoid weight gain.
