If they fall to the ground, are they past ripe? Or still okay to eat? I'm going to roast them first.

Not a single person has a single thing to tell this Yankee what to do with all her tomatillos?

Yeah! Judy! Two Yankees here, with no clue what to do with tomatillos!

I think I am going to roast them, with halapenos, onion and garlic and chop them up and then what?????

Hi Bee,
A tomatillo is like a tomato in terms of ripeness.
I have used the fruit that have fallen to the ground but they should be firm and a nice limey green.

They make great additions to salsa, can be used as the prime ingredient in salsa......blended in a food processor...called Tomatillo Salsa and my mother in-law makes a relish out of them.

Out here in the Southwest they use it in several Mexican dishes.

CLC, Thank you! They do seem firm, nothing squishy, I just noticed there is a huge difference to what can be inside that sheath... . . . Should the perfect product be something plucked from the vine, or gathered, or maybe both....???

I'll do my best to make this something-special green sauce, my teen boy will make guacamole, and we'll try to have some kind of Huevos Rancheros, N.E. style.

Let me know when--I'll be over. LOL.  Seriously I know what they are and somethings you use them for but unless I don't know it have never had them.
By the way Bee, there is a cool recipe website I go to--it's called www.allreceipes.com and they generally have something for everyone. Just put your food in the search and it will pull up lots of stuff, not just recipes........
