I don't know about the weather where you are, but here it is much crisper and cool, last couple days pretty dreary. The kind of weather that makes you want to get in the kitchen.  I thought maybe some of you would like to share some of your favorite comfort food recipes.  Esp if somebody has a really good white chilli one!

Here ya go!

White Chili
 
Tbsp olive oil
1 clove of garlic, minced
1 sweet onion, chopped
2 whole chicken breasts, cooked and cubed
1 large can chicken broth
1 can Cannellini beans
1 can Chopped green chilis
1 tsp cilantro
1/2 tsp basil
2 tsp cumin
1 tbsp red pepper (optional for spiciness)
salt and pepper to taste
2 tbsp corn starch disolved in 1/3 cup water
 
Saute garlic and onion in olive oil until onion is clear and soft.  Add all ingredients except beans.  Simmer for at least 30 minutes.  Add corn starch mixture and stir until thick.  Add beans last, cook 5 minutes until beans are hot.  Serve with corn chips and shredded pepper jack cheese.

You're welcome!  It's a good one... easy, delicious and low fat.  Put green habanero sauce on the table and everybody can make it as spicy as they like.
