In reference to your question regarding the difference between gripwork/tugs/form training, IMO, there's not a huge difference, but enough. Personally, I don't do any of that stuff anyway (tug, gripwork, etc.) but I still see a difference between your dog biting you and you engaging the dog w/another object, like a tug.
I had a guy not listen to me on this (working potentially serious dogs yourself) and then tell me about a time where his pup (a little under a year old) bit him so hard high up on his arm that he paralyzed his arm and he had to drag himself over to his bag to try and find something else to get him to "out" onto instead. He finally got him off the sleeve onto a ball, but he still was injured and has had training issues (to put it mildly) ever since. I had another person have a similar situation but not quite as serious.
I don't know your dog; maybe it won't be a problem, but regardless, it's either a not-so-good idea or a really terrible one.
