I'm interested in hearing how many people use the old leather training collar with bolts pointing inward to train their dogs?

And what do you think of this collar?  Is it humane or not?   Does it work well?

Why do more people today not use it?

They refined that design and now call it a pinch collar.
How they work depends on who's using it, and no I have never needed or used one.

Don't know about the old spiked training collar, but, I do like the old spiked punch at a party!

...and also, how well it's adjusted to fit, and how well it's made. The collar doesn't work well if it's too big or too small. You may have to remove or add links to get a good fit. Also, some of the cheaper ones have sharpened spikes on the inside that can actually puncture the dog's skin if you're too heavy=handed with the collar.

Properly adjusted, I've been told by fans of it that it's actually milder than a choke collar, though it can deliver a harser correction. I've used one when I adopted an 80 lb. fully grown male GSD who'd never been walked on a leash before. Within half a day, he acted like he'd been trained to a leash all his life!

The only time I ever use it now is if his leash manners get sloppy, and he starts to pull. The minute I put it on him, he knows I mean business, and immediately starts to walk on a loose leash, without pulling. He doesn't even try to test the collar!

My friend and business partner uses one on her 130 lb. Shiloh male occasionally. She says it's like power steering on a car!

If you have a strong dog that is threatening to pull you off your feet with a choker, I'd give it a try. But I'd make SURE I knew how to use it properly, and make sure the dog didn't get desensitized to it.

Why don't more people use the old leather collar with the bolts? Probably for the same reason the prong is outlawed in certain places, and even the choker is frowned upon by the positive treat-training crowd, who have never had to try to control a large dog that's lunging towards someone's throat!

Does anyone here know the differences between the metal prong collar today and the old leather spiked training collar?

I have seen the spiked leather collar.  I personally would not use it.  However, I also no longer use a prong collar.  A fur saver on the dead ring or a light nylon collar is enough.
