At what age of gestation can we clinically say that a bitch is pregnant.Any signs in early pregnancy that offers clues...? appearance changes or character changes..?

At 25 or so days, you can do an ultrasound. There is a blood test you can do after about 3 weeks, but it is unreliable (false positives, iirc). You can x-ray shortly before the due date. Some people can palpate the uterus and find the fetal sacs, but if you're not knowledgeable, you could harm the babies by poking around too much.

Other than that, you can't know for certain until/unless mom's belly gets distended.

 I've found when my girls have taken then often get really cuddly (more so than usual) you will often see pinking up of the nipples and after week 3 you will often see a coat flick, running down the side of the flank.

You may get a bitch who has always eaten nicely become fussy, or even stop eating completely.  

I do scan, I go to a lady who has been recommended and is excellent, she is also a sheep scanner is is more accurate than the vets!  My girls get scanned from 4 - 5 weeks.  After 5 weeks accuracy for numbers is not so good.

Fine answers you got above, As a matter of fact I never bred dogs till this date and my knowledge is only what I read and hear from others on this issue so I regret not being able to add any additional information to what you got already from Liebe and blackthorngsd. Also I know Sonora is one of the most knowledgable in conformation and Debi Sue has the right eye for what a GSD should look like but I don't think they are as good at actual breeding.

She slows down a bit, she is more careful.

female will get very loving,  at about 3 weeks will go off her feed and start to get her aperate back at 5 weeks,
 

at 6 weeks you should start to see her getting bigger. unless she does not have many in there, she will start to loss hair.
 

she will also be  very lazy too. some get anzeity too. some will never show any signs, it depends on the dog.
 

untra sound at 30 days is a good idea and or xray  at 42 days or later.. i just wait and see....

Should the bitch be caged during the latter 2 weeks of her pregnancy to minimise any risk of an abortion.
or would she take care of things on her own.

No, gentle exercise will keep her fit and give birth more easily.    Caging her will restrict her movement and may make her anxious.  Watch her over the last few days as she may try to go off somewhere to have them.
