Whatever word you put on it. For my dog it's out. Most people use Aus, Pust, or Los.

It's the "out" but like 4pack said, it's any word you use. Aus is most common, I'd say. I actually use that or just simply "that's enough."

And after that, when he is latched doing "protection" to said arm, you don't know what to do to let him go?

THANK YOU .. I HAVE A NEWBIE TRYING TO SCHOOL ON WHY HE'S GETTING RID OF HIS DOG DO TO LACK OF PREY DRIVE...WTH :(
HERES HIS POST:
6 months & never hunting. we've popped whips near his head , plastic bags, everything. dog is not afraid of shit. REAL good nerve.
no interest in other dogs. could careless. im his pack not them. hes a good dog just his prey drive is not there & i dont want to train him in defense.
theres a difference between a pet & a "working dog". alot of pets will bark at someone new or "dark" but ill bet 90% will turn & run when pressure is put on them. its alot of posturing.
I'm new to working dogs but not dog training.
joined the best Schutzhund group & ppd group in the state & have learned ALOT. fast.
not saying hes a bad dog, love the little guy. just doesnt have what Im looking for

Surely you are not working the dog on your own arm that is a No' No.. Whatever the two most common words used over here in Belgium is 'Aus' or Los i use 'Los'
Most of the German Folk use the word 'Out'
