This is a tough one to answer with the info given,but for my self I guess I,d like to see how he responds to a new helper with out a sleeve see how he reacts to just the man with no distractions not a bunch of heavy handed stuff just prey movements and see how the dog reacts to it, before I would start working protection things Does he look for a sleeve or toy? does he focus on the man to initiate movement I,d definitely want to see how he had been worked prier to myself.
Before i,d do any protection work with him I,d need to know what gets him off to begin with what makes him tick.

Did anyone do "puppy bite-work" with the dog previously? I always use rag and toy to teach the puppies to bark to make the prey move, countering, and pulling back. Not to mention lots of tug of war. I also give them toys specifically for them to have "fights" with to see how much they want to dominate a toy about as big, or bigger than they are. I start that with the baby puppies and it continues until they start working with a helper.
What I would want to see at 18 months is that the dog likes the fight. I would want to see a lot of confidence that comes through as the pup wanting to engage the helper and kick his ass. The more of a fight he gets, the more he likes it.

I like to work with the puppies personely as maiking them bark at the man first then after the barking the helper produces the rag the helper must be very animated and know how to make the puppy feel strong. after that ponit then i let the helper produce the rag and play with the pups that way.

Since Judron posted it and i,m pretty sure he has GSD,s I,d say better then not the odds are it,s a GSD...God knows I could be wrong I was once a year ago!. I also think that if you read (you can can,t you) several of us asked how the dog had been worked before or that with just the info given it was a best guess.
And I believe when Albert postulated the theory of relativity he would not use your parents being cousins as a example of what he ment?
