Large dogs or medium sized dogs? And why?

I have both,
Depends on what you want to do with them.

I prefer to keep within the standards.

I perfer medium or somewhere between mediun/large.  Why? Because of longevity of the dog is greater (sometimes) and they tend to move faster all else being equal.  All else being equal like heart of the dog

My preference is for dogs of the correct size according to the standard.

That having been said, I would (and have) consider taking a somewhat over-sized male like Tyson von Arminius (http://www.pedigreedatabase.com/gsd/pedigree/123468.html) to a medium sized bitch if he possessed all of the other attributes I was looking for.

i like 'em between 60 & 80 lbs.  lean, but not thin.

Medium size is the correct size. A medium-sized dog or bitch gives one slightly more freedom when selecting a breeding partner that is towards the upper or lower limit of the breed standard.

Keith - Tyson - oversized?  I used to co-own him and can assure you that he's definitely not anywhere near oversized.  He's actually a medium-sized male.  Very plush coat may make him look a little larger but he weighed 68 lbs when I had him.

I like to the upper side of correct. You get strength and speed at the same time (not to mention health). Don't want any bitches over 70 or any males over 85--and that's pushing it. My girl's brother is 105, really smart and eager, but a slug because of his own body weight. I've been taking serious measures to make sure THAT doesn't happen again.

Don't want too small because I get sick of everybody asking if they are Malinois or GSD/? mixes. Too vain, I guess!

Females up to 70-72 lbs and malesup to 85 lbs. Anything more than that is oversized. Stick with the standard.

We have several 90+ dogs in our club and while they are usually beast in the protection, they are slow on escapes or searches. Not to mention health issues.

I prefer a mid size. My female is a medium/large female who max's the breed standard in height and comes in at 70 pounds on a strict diet (she would easily be over 80 if she had her way). She is very athletic and proportunate.
My male is a mid size ver proportunate male who comes in usually between 72 and 80 depending on how much time he is in a run and I have to feed 7 cups a day premium kibble to keep weight up to 80. But I would take my males size anyday over a 90+... he is fast and a banger too! (He will catch you and he will hit you hard)
