Lets say I get a bi-color dog who's parents are both sable. I breed him to a sable bitch, who's parents are sable and blk/tan.
What are my puppies' colors possibilities ?

Since the male is Bicolor from both sable parents then he has two bicolor genes, or one gene bicolor and the other black in case one of his parents had a black recessive gene. So the male either (bicolor+bicolor) or (bicolor+black).

In regards to the female she is may be (b/t +b/t) or (b/t+bicolor) or (b/tan+black)


 You can get puppies b/tan, bicolor and little chance of solid black

If he's bred to a sable bitch, she must have a sable gene, with any combination of possible recessive, not knowing her non-sable parent's genotype.  Correct with the boy's possible two genotypes, but puppy possibilities of any phenotype, half are expected to be sable.

you will almost always have some sables from a heterozygous sable parent  ,the puppies would probably all be on the darker side
