Rachel
Is your icon a photo of your dog? He is beautiful.
I assume from your last post, that you are 15, and not the dog..........
First, you really need to start off with dogs that have their hips and elbows certified free from dyspepsia. Better yet is to find a sire and dam dog who's parents and grand parents are also free from dyspepsia.
Even better yet is for both sire and dam dogs to be certified free from dyspepsia and have some type of title, preferably a working title of some sort.......Shutzhund, herding, search and rescue, rally, obedience, something.
German Shepherds are classified as "working dogs' and many feel that these dogs should "prove their worth" as a working dog before they have puppies.
Next, there are many people who have their opinions on when to breed a female dog to a male dog.......Your best bet is to research this. Much information can be found on the Internet or you can ask your dad. Many people her say the 11 day and again on the 13 th day for the biggest litter.

Rachel- if you really love GSDs, why don't you get involved in performance sports with the dog you have? My daughter is 13, and her dog already has 2 AKC titles and 2 legs on a third one. I support her 100% and I bet your parents would too! Its amazing the important life lessons you learn when you get involved with your dog. One of the perks is everyone just LOVES a good junior handler- we know they are the future of our breed! So you will get tons of help and encouragement.
She is also working on her SchH title and when the dog is breed surveyed we will breed her- together. Her knowledge of GSDs does not come from simply making puppies, but showing her dog (and some of mine) in multiple venues. She already understands the difference between a dog who is breed quality and one that is not, and if she wants to be a breeder when she is old enough and has the space, time, and resources, I know she will do a great job and only produce quality dogs.
I know you say you have homes lined up for puppies, but you'd be amazed how many people will tell you they'd love a puppy and change their mind when the puppies are born! Also, your girl is too young. At 24 months you can have her hips/elbows xrayed for OFA. This is not optional, you MUST do this if you are serious about breeding healthy dogs.
Rachel, do you have a facebook? I'm sure my daughter would love to "talk dogs" with you!

Hi Sitasmom
The dyspepsia typo made me chuckle too, I guessed it was a spellcheck moment, but it reminded me of someone telling me years ago that "Alstations" (not a typo, he really said Al-stations) have Hip Disclosure
