Why do we stack the GSD like we do ?

Hey guys why do we stack the dogs not on their "toes" but almost on their hindquarters? (don't know the word)

Like this dog (old photo I know) is stacked on his feet like normal is I believe...

As a posed to this ? Why is the dog stacked in such a way ?

I think it is called hindquarters ??

Again my question is why is it done like this ?
