I have a 2 year old Male shepherd from these two dogs. Can you tell me more about what his lines are actually showing me.

From his genetic makeup, what should I expect temperament wise? Mental Stability? Health? etc.

Your dog is the offspring of a half brother and half sister breeding, thru Valco vom Leerburg. I personally would not do an inbreeding like this. I however, am not opposed to line breeding, but the closest I like to see is a 2-3.
With that being said, the sire is a mixture of west working, DDR and American lines. I personally do not know much about the American lines.. so I wont comment on them. But as for the West workinglines and DDR. What I see in the pedigree is very nice. The dam to your dog is also a mixture of West working and DDR.. I like to workingline, DDR crosses... they seem to have very stable nerves, good work ethic and a good balance of prey and defense.
What are you planning on doing with your dog? Are you doing SchH with him or is he just a pet? You said he is 2 years old, so what health testing have you done?.. OFA's.. DM testing...etc.

I saw a pup from this breeding, he had very weak nerves. I would not trust him around anybody.

Jyl- As of right now he is just a pet. Thinking obedience and tracking. Really just got into the GSD community. He was a rescue as a pup. He hasn't been much more than a pet. Haven't had any health testing done on him. I was actually asking because I was told due to his cross of lines (german working/american pet) he would always be a unstable dog. What are DDR lines?

The dog is of mixed lines looks like German working line and American Showlines as far as temperament it is always hard to tell for sure. Given the vast difference in temperament between these two lines it becomes even harder to tell. The dog could have lots of drive and energy with confidence it could be nervy as hell, without seeing the dog it is pretty impossible to tell though. Concerning to me through the American line on this dog especially is the lack of hip testing and elbow testing, I would be sure to check the dogs hips to see if the dog might have any underlying issues, the sooner you know the better.

Because of the inbreeding on Valco you would have to personally know Valco to get a better guess of what his grandprogeny may be like.
The paternal grand-dam (Gretchen of Maineville) really prevents the "guesstimating" of anything about your dog. she is mostly american pet who-knows-what lines (with a small about of AM showlines.)
Your dog is already 2 yrs old so you already have a good idea about his temperament and current health status. Unless someone here personally knows Valco and Gretchen (and dogs in Gretchen's pedigree) then no one here can accurately tell you anything about your dog's likely traits.
If you want to get into an activity with your dog then by all means, do so. Your dog will show you what his own strengths and weaknesses are.
You can have his hips and elbows x-rayed if you want to know their status (beware some vets really suck at this and will tell you they are bad even if they are great), you can get him DNA tested for DM if you want to know if he'll have that when he's older. Everything else is a crapshoot.

Also does anyone know of a decent trainer that is good with Shepherds in the Dayton OH area? One who would be good with my dog who is 2 years old, knows some basics but not a lot. A little undersocialized (my fault) that is trains in obeidience first and maybe tracking/agility. I can't spend an arm and a leg, but would love to give my boy a "job" to do :)

Sorry about that, the dog I saw from that breeding is the one I wouldnt trust. You could have a great dog on your hands. I am from this area and I have seen a few dogs from this breeder. Some are great family pets and others not so much.

At two years old, you need to look at the dog in front of you and not the pedigree to know what to expect. JMO.
