Recipes sound good. I love to make my own sharp cheeses. I have 6 rounds of white extra sharp with olives and basil in the cellar for 47 months now. A few years ago, I gave some others away for Christmas, but only kept in the cellar for 19 months. I think the trick is the longer you keep in the cellar the sharper they get. I cut one open a few weeks ago for a wine party and it was almost as sharp as store bought vermont type.

Recipes are  good.

 BabyEagle,

Is cheese making something difficult to master? I love cheese, especially white cheese. You mentioned olives and basil; I bought something the other day that had olives and other seasonings mixed into cream cheese and then rolled up in mozzarella. It tasted wonderful, but cost close to $10 per pound!

No cheese making is quite easy if you have the correct equipment!  first you need the unprocessed milk product! I prefere goats milk! Actually there  are way to many antibiotics and hormonal ingredients from cows milk!  You could make a small production run of cheese from Goats milk! google goats milk cheese and equipmnt suppliers ! Wisconsin has many  ready made cheesees!

BabyEagle-
Cheese sounds lovely.  I make applesauce - there is an orchard nearby, and I use Honeycrisp apples.  It's the best stuff ever, and my family fights over who gets the most for Christmas.  I only have 1 jar left to last until August, so this year I'm going to have to make a lot more.

My definition of approval (mind you I don't have a stud at this time but I have thought about this for if/when I do)

*Current on all vaccines with negaitve results for brucellosis and/or any other neccesary cultures
*Registered with an FCI recognized registry
*Free of disqualifying faults
*Minimum 24 months of age
*OFA and/or "a" stamp hips/elbows
*Has earned a minimum G rating in conformation and has obtained some type of performance test/title. I don't care if its a BH, an RN, or a even a CGC.  They may not be breed tests, but I think if want to turn a buck off your bitch the LEAST you can do is throw the dog in a ring one time to get an unbiased opinion and give it enough training to be mannerly and stable in public.

I will stick to SV rules myself but I understand that schutzhund is not for everyone and is not always the measure of a good dog. If someone shows some effort, sure. Seeing $$$ after your female has lived in the basment/garage/yard her whole life...no thanks.
