The "pilars" to look for when it comes to working ability is Mutz von der Pelztierfarm and Marko vom Celler Land. Marko was pretty much eliminated from the conformation lines, but if you look hard enough you will still find dogs with lines to Mutz von der Pelztierfarm. Just look for Cello Roemerau (Hill vom Farbenspiel) and Fando Suedblick. My first conformation line female was linebred on Nick Wienerau (the grandsire of Fando) and had been 11 times SchH3 with different handlers (one being a child of 11 years of age) on different fields, highest points 284. Unfortunately, Fando Suedblick is not found often anymore, mostly in a few female lines, Nando Gollerweiher for example.
Yes, Canto was known for producing weak temperament, but nowadays male-tale-descendants all produce nice workability (Quartz dei Templari through Frei Hirschel, brother Fanto, Enzo Buchhorn through the Mark Haus Beck-line).
In my opinion, we linebreed too heavily on dogs out of the Quanto Wienerau-lines (Ursus, Max della Loggia dei Mercanti through Jeck Noricum, Odin Hirschel, Esko Daenischen Hof through Zamb Wienerau). If we want to consider the Quanto-line for workability, we need to stay more with the Uran Wildsteiger Land side (Ulk Arlett, Hoss Laerchenhain), or go to the Enzo Burg Aliso-line to Timo Berrekasten.
It all comes down to what Walter Martin once said: If you want to keep drive and willingness to work, you have to breed to a crazy one every once in a while. And I think that is what happened: We bred a lot of drive out due to the heavy linebreeding on the Quanto Wienerau representatives.

Nearly every show dog I have had or known that went to Cello Romerau worked pretty well in all three phases, particularly through Eros Luisenstrasse.

Check out V rated Tee Jay of Wilhendorf kennels. A Nero son (VA4 Enzo Buchhorn) with excellent working GSD temperament. This dog is a very attractive up and comer and is as hard as nails, but very sane too. And his pigment is great as is his sidegait. His bitework at the 2006 Sieger Show in Germany was outstanding.
Also take a close look at the stud dogs of Kichenwald Kennels in Pittsburg. Gayle Kirkwood's stud dog's have big heads, heavy bone, are very masculine and are well known to have true working GSD temperament, while being friendly, sane and have high prey drive with extreme defense reactions. She imported the highly esteemed VA Utz von Hirschel, an Eros Luissenstrasse (Youth Sieger) son. Utz, like his father Eros was as hard as nails and had true working type temperament so characteristic of the VA Mutz Pelztierfarm line. Eros was a legend in Germany for his ability to produce dogs that excelled in bitework and protection.

I 100% agree with Shelly regarding Cello through Eros. I owned a bitch that worked like a working line male who was a granddaughter of Eros. She was a rocket and a hard hitter. Her bitework was phenomenal. Of all the dogs Ive owned, both working and showline, she was the best. Highly trainable and very much wanted to please me.

Marko's father was an HGH dog.
