My old dog used to run at 31-33mph for 1/4 mile bursts, he cruised at 26-28 for a couple miles at a time. My old lady used to be able to do about 30mph and at 8yrs is down to a high of 27. I go about 1/2 mile at 25mph and then slow them down to 12 for a couple miles at a trot. I don't try to clock how fast they trot so I can't comment on how fast they average at that.

An AD is about 12 miles @ 7 min/mile or a bit slower => 84 minutes of trotting to go 12 miles. That's 1.4 hours to go 12 miles or ~8.6 mph. And that's with a break. For short distances, some fast gsd's can trot a bit faster, say 10 mph.
I had a great gsd in the 80s who went to dog races in Massachusetts. People would race all breeds on a field, with holders holding the dogs at the start and handlers standing over the finish screaming like crazy. My gsd was pretty fast and ran 100 meters in under 8 seconds, which is 28 mph. The fastest man in the world, by the way, is Usain Bolt who has run the 200 m in 19.19 which is 23.31 mph. His 100m WR of 9.58 is 23.35 mph. So no human has run faster than 25 mph.
At those dog races, there were no greyhounds, but there were some whippets who clearly ran over 30 mph. I don't doubt that very fast gsds (probably NOT AD dogs, as the distance training dulled their speed) have run slightly over 30 mph.

Btw, at 28 mph my gsd beat about 80-90% of the "fast" dogs who showed up at those fun meets.
So the average dog whose owner thinks is quick runs about 25 mph.
I would be shocked if many gsd's could run 35 mph.
And even more shocked if any gsd's could swim over 7 mph. That's an 8:30 mile -- that dog was swimming faster than the average runner in a recreational 5K race?
I am not a particulary good swimmer myself and I have always insisted that my dogs swim alongside me in a lake -- I hate non-swimming gsd's -- as it is the best way for them to exercise in the heat. I have NEVER had a dog swim faster than I swim, which is at my very fastest 3.7 mph. That's my competitive 50m swim sprint pace, and I don't know if I have ever swam top speed with my dogs, as they cannot keep up. My estimate of a good swimming gsd is 3-4mph. I had a lab who swam at about 3.5 mph and he was my fastest swimmer in 25 years of dogs.

It's different in the water, cause the fast speed is always attributed to the force of the body going into the water. Dogs who swim or even horses for that matter if they manage to hit the water at 4, 5, 6, 7 mph .. that is the speed they continue to tread with no current. Now if a dog or horse walks into the water, ya, 2-3 mph would sound about right. People can swim 50 yards in about 25-26 seconds.
A Greyhound is the 2nd fastest land mammal going from 0 to 40-45 in about 3-4 leaps of faith or 2 secs. That's 16:48 for a 990ft (301 3/4 meter) or (3/16 of a mile) run. Even with the GH, not too many can go 43-45 plus mph on a great day.

Usain Bolt became the 100m WR holder with a 9.69 (Beijing - 2008) and now (August 17, 2009 - Berlin) a 9.58,
1996 Atlanta Olympics, Donovan Bailey in a WR time of 9.84 secs, covered a 10m portion at 12.1 meters per second. That would translate to about 27 MPH or about 43 Km/h.
Both he and Maurice Greene hit a 10m section of the 100m final of the 1997 World Championships at 11.91 m/s... Greene ran a 9.86 and Bailey ran a 9.91. That would mean both reached a speed of roughly 26.5 MPH. Considering that, even the reductions the WR has taken in the last 12 years, it would be okay to assume 27-28 MPH is the fastest speed ever attained by a person running.
Though Bob Hayes, in 1964, ran his leg of the 4x100m relay in 8.50 seconds.
During Usain Bolt's World record 100m sprint (9.58) at the 2009 Athletic Championships in Berlin, Usain covered Bolt reaches his top speed of 12.27 m/s or 27.45 miles per hour at the 65 meter mark.
I agree overall with the posts regarding speed.
Huskies can pace at about 20mph in a short (20 mile) race, than about 12-14 mph.
But there are lots of factors (Temps, conditions etc)

My dog decided to leave a moving vehicle once also, she rolled like a ball and bounced a few times.
Never had the problem again. Once was enough.
She was lucky not to have gotten seriously hurt.
