After researching the question a bit, I sent an email to a raw-fed dog website, and the owner of the site was kind enough to send her opinion in a prompt reply.
This was her reply:
"it is absolutely ok to feed just the yolk. As long as egg yolk is not
100% of the diet, and that it's just a part of the overall scheme, of
course"
Since I feed raw, I choose to value her opinion. The original poster posted a simple question - and this seem's to be a nice simple answer :-).
One can choose to agree or disagree. Keep in mind that this opinion is based upon a raw - fed dog diet. I believe the original poster feeds kibble - but I am assuming the answer would be the same.

Thanks, GreenearthK9 for taking the trouble to ascertain the information you posted. Between this information and other private feedback I have received, I am going to feed them the yolks.

since i also have chickens (and a bunch of other animals) i feed raw egg to my dogs. eggs are awesome, but the key here is to remember how rich they are. too much of a good thing will give them diarrhea. personally, i don't ever give a dog more than 1-2 eggs per day and maybe only 6-7 total in a week's time. some folks may feed more, but i don't like to see the squirts, so i'm careful.

ziegenfarm, I should have been more attentive to your advice.
Both my dogs developed diarrhea - one more severe than the other. I have to believe that it was the single egg yolk each that I was feeding both of them because I did not make any other change. The effect was not immediately apparent - so I am inclined to believe that it was the cumulative effect.
So, my little experimentation with egg yolk must come to an end - unfortunate, because they both quite relished it!
