My Italian Greyhound was vaccinated for her first Rabies shot around July 26th 2012 as 4months year old. My appointment for her next booster is on August 8th.
I know by "law" she is not current on her vaccination, but does that mean she has absolutely no immunity of the disease?
Will she be safe until the 8th?

Welcome to the database and yes she will be fine................

Your only really significant risk is if she were to bite someone, she'll be viewed as being an 'unvaccinated' dog and subject to a 10 day quarantine [in most of the US], which might be mandated to be done at a shelter facility instead of at home. Were she to be exposed to a rabid animal, however, she would probably have sufficient titer to protect her from becoming infected.

The one thing you may not know is that your first Rabies shot is good for One year the booster is good for three years if you get it before your current shot expires.
If you do not get the booster shot  before your current shot expires then your next shot will only be good for one year and then you will have to get another one next year.
The same rule applies for every Rabies shot  if you let one expire.

This is the rule here where I am so check with your Vet and if you have to get a License for your dog then with that Department.

And to add to the above, it is all the SAME vaccine; whether it be 1 year of 3 years.  Same vaccine.  Just rules and regulations brought on by whomever.  Less vaccine is always better as long as your dog is within the law.  Great days  Nan

Laural H, that is untrue. I've waited a year past the one year booster recommendation (indoor cat, never goes outside) and have still received the 3 yr. This has been my experience in both NC and FL.

It is the same with children. Just because you don't do the vaccines "on time" does not mean you have to start the series over.
