I had first pick of the litter. I picked a female that was the first born. She had a nice personality and good bone structure. I wanted to get a male, but decide to look for a large female. The stud is 100 lbs and the dam is 85 lbs. I just talked with the breeder and she told me that my pick is not as long as the others but sh is thicker. I talked to other breeders before I picked this girl and a few of them told me that they can all change either way. I'm looking for some opinions. Since she was he first born, can she grow later on age.

Are you saying the most important aspect of your first pick choice is to get the largest sized dog in weight, or maybe height for ... what kind of breed? I certainly hope you are not talking about the GSD. I don't think a reputable, serious dog breeder would even give you pick of the litter.  Sounds like you are dealing with amateurs and perhaps are one yourself? And the birth order comment sounds ridiculous.

85 lbs for a female and 100 lbs for a male is far too large.  Look at the standard.  What do you plan to do with the pup?  If it's a pet, then temperament should be your first concern in picking.  If it's a sport dog, then you should be looking at temperament & drives, if it's a show pup, then overall conformation and certainly not an oversize one.

First pick usually has nothing to do with birth order.    It would simply mean that you get to pick your puppy from the females in the litter before anyone else does.   Your "pick" may not be the same as someone else's. 
Birth order"may mean something with humans, but it does not mean anything with dogs.   The first-born could turn out to be the largest...or the runt.    The runt could turn out to be the best dog and normal sized.  

As pointed out, the parents, if gsds, are very much oversized.   That may not be an issue for you, as some people like gsds that are outside the standard, due to overly large size, color (white, blue, liver, panda, etc), .
