What supplement should I add to my dog diet to make his coat shinny?

Smart dog! 
Assuming you are feeding the correct ratios of meat, bone and organ -- the only supplements I would suggest to add are Vitamin E and Salmon oil.
Vitamin E amounts as follows:
• 0 to 25 pounds - 100 IU
• 25 to 50 pounds - 200 IU
• 50 to 75 pounds - 400 IU
• 75 to 100 pounds - 600 IU
I use Grizzly Salmon oil.
Body Weight Pump Strokes
Up to 12.5 lbs 1/2 Stroke
12.5 - 25 lbs 1 Stroke
25 - 50 lbs 2 Strokes
50 - 75 lbs 3 Strokes
Over 75 lbs 4 Strokes
One pump stroke is equal to 0.12 fl oz.

A shiny coat goes with natural good health, It does not come out of a bottle which you rub into the coat, It can however help to come out of a bottle if given on its food i.e Salmon Oil. Good health comes with how the Dog is Fed, What it is Fed on, How much food it is Fed, For over fed Dogs are not healthy and will not have natural shiny coats
One more thing to add The Place the Dog lives If you are keeping it indoors and have the central heating on, then that too is not good for the Dog,
Make sure you feed it on a Top brand kibble without Grains or at least without the grains which mess dogs up and a good high meat content with Fruits and Veg, or feed Raw with supplements
For me the Dog is better out doors living , that does not mean it cannot come indoors for a few times during the Day but it will have all the fresh air and natural things Its coat will be such in the winter that it can combat what mother nature throws at it providing the kennel is dry and away from the wind once the dog is inside, and the dog will look a million dollars coat wise and all for letting things be natural

Salmon oil always makes my dogs itch...even if I buy the best quality I can find. I don't get it.

I don't use it, but my father swears by raw egg and a table spoon of bacon grease every Sunday to keep a dog's coat shiney, he used for many, many years. His dogs always looked great and were top notch hunting beagles, people used to come from miles around to hunt with him.

My favorites for a shinny coat are eggs, canned salmon, and some meat grease on rare occasions.
Plus they sleep on fresh cedar shavings, fresh as in I make them myself.
A good brushing regularly is a must.

NuVET wafers and a good Salmon oil is very helpful for skin,coat, and even hips & joints, too...
