This past weekend after a long day at the swim meet, we took the family out to dinner into the city. The weather was lovely, so we asked for a table outside. We enjoyed the activity happening in the streets as we listened to the sound of music drifting on the air from a nearby outdoor concert. 

But my favorite thing was the amazing surprise, or taste explosion when I sipped my first ever, Watermelon Jalapeno Margarita. It was awesome! I am going to make them for guests at our next pool party. I found a few recipes that I thought I'd share. One is more sweet, the other more salty. I like the salty rim.

Smoky Watermelon-Jalapeno Margarita

Ingredients:
·         1 jalapeno chile pepper
·         2 ounces tequila (I used a Blanco, or white, un-aged tequila for this)
·         1 ounce freshly squeezed lime juice
·         1 ounce watermelon puree
·         ¾ ounce agave nectar/syrup
·         Hickory smoked salt for rimming the glass

Sorry that just doesn't sound like anything I'd enjoy in or out of the pool....LOL

Don't get me wrong, I like Margarita's, you lost me with the watermellon.

You have to try it first before you knock it! The watermelon juice infused with the jalapeno is a kick in the right place. And refreshing at the same time. So unexpected, yes! LOL One can substitute strawberries, if one feels inclined.

I saw a cucumber-halapeno one on the menu, too, but I think that would be just too much heat, for moi. Not for a real, hot pepper connoiseur, I bet.

I am one of those who can't handle anything too hot/spicy, my former sister-in-law (Puerto Rican/Cajun/Creole) used to make a special "wimp" version of her food for me. lol  Otherwise, it sounds awesome.

Sounds real  Intriging but I will stick to "WATERMELLON RIND PRESERVES
In the latest issue of New Mexico Highways and Byeways  there is a recipe with GRAPEFRUIT

THE GRAPEFRUIT GIN FIZZ

1 1/2 oz Nolet Gin
 1 oz Wilbanks Farms  Tupelo Honey Syrup
1 egg  WHITE
 1 oz  Freshly squeezed Ruby red Grapefruit
 
Combine all in a shaker well shaken for 2 mins
to develop a frothy foam

Strain into a highball glass

Garnish with a slice of Grapefruit

I think these sound really yummy on a hot day...Dirty Pirate Popsicles


2 1/2 cups Coke
1/3 cup Captain Morgan Spiced Rum
1/3 cup Kahlua
 

Place all ingredients in a large glass and stir to combine. 
Pour mixture into popsicle mold.
Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright.
Insert popsicle sticks and finish freezing popsicles overnight. 
To release popsicles run hot water on the outside of popsicle molds for a 2-3 seconds.

*Slightly flat Coke will produce a popsicle that stays frozen longer. 
To quickly and manually flatten out the carbonation, empty out enough Coke from a 2-liter bottle to leave a 3-inch space from top of bottle to top of coke. 
Place cap back on and shake vigorously for 10 seconds.

Mmm...I Love Margarita's.....everything but the smokey salted rim sounds intriguing.

YR  That grapefruit formula sounds brilliant even though I'm
not normally a gin drinker - wonder if it would work with
another clear spirit ?  Unfortunately I won't be able to try it
out - medication precludes grapefruit in any form.  Curses !
