Have you considered adopting a retired police German Shepherd? I got one as a kid, and she was the best guard dog, as well as gentle with kids. You could help them, since they often need homes and don't have any, and get just the dog you need. They don't bark much, but when they do you know its important, and they will actively protect your family, not hide if someone actually broke in. Do look for one with a laid back temperament, because that shows good nerves. Forget about coat type, or color, it doesn't make the dog.

Perhaps you can get on a waiting list, or contact a rescue. I got mine from the animal shelter, because they couldn't find her a home. Its upsetting sometimes, the way these dogs are treated. You may be able to have a retired police dog shipped in from another state or county.

Living in Texas you really shouldn't have an issue finding an older/retired dog. Lackland Airforce Base outside San Antonio is where the military working dog program is based out of and I'm sure they have plenty of dogs to adopt out when they either don't work out a younger dogs or are retired older dogs.

alaniz19, this site has some suggestions as it pertains to adopting a retiring MWD. Be patient, and keep checking around. If there's an IPO or DVG club near you, it wouldn't hurt to ask if you can come out to training to visit and start getting familiar with things...and you might make some contacts who have or know of a dog that is going to be retired soon.

I´d go with the "club near you", too, as a father of a toddler and a 5 years old I´d never buy any adult dog sight unseen.
The likelihood for your children to get harmed by a strange adult dog is bigger than the likelihood to get harmed by intruders.
In case you really want to go the "adult dog" route, doublecheck the dog in question not once, but several times.
In "a club near you" most certainly there will be breeders, too, and talking eye to eye, explaining your actual situation, will help to find the "perfect" dog.
