What I would do is first of all, like mentioned above, I would find a bait that he really loves. I use a combination of the Natural Balance dog food rolls, dehydrated chicken strips I get from Costco and also the jerky treats from Solid Gold.  With that being said I then would go back to basics with the dog.  For my dogs I track with a harness. But I would use what ever works better for you.

I do not do scent pads with my dogs. I start them with short straight tracks. The reason that I dont do scent pads in that in my opinion it teaches the dog to go all over and not follow the track in a straight line.  I use the Gottfried Dildei method of tracking. I make the track itself the reward for the dog. At the beginning of the track I do two sets of foot prints and put a couple pieces of bait in each step. At the end of the track the dog gets a small amout of bait in a couple foot steps. The dog is walked calmly to the track to start and at the end is calmly walked away. There is no ball playing of any sort assosiated with the track. That way the dog learnes to be calm the whole time and is not thinking that at the end their is going to be a "jack pot" so to speak.  For dogs that are very fast trackers and are hectic I would do what Gottfried Dildei says and length the distance between the foot steps. So if you make the steps 12 inches apart, then make them 15 inches or so with bait in each step. That way a hectic dog can learn to calm down and be more methodical in their tracking.  Also dont make the pieces of bait to big. I make mine no bigger than a dime. Especially if the dog is hectic on the track. If the dog has to stop at eat the pieces of bait it will make the dog more hectic. The dog should be able to eat each piece of bait without stopping.

I would also take a look at the Gottfried Dildei tapes. They sure helped me with my first GSD.  I got my tapes from Ray Allen K9....

I love to see what kind of gourmet treats people will bring out tracking, hoping to coax the dog into tracking that particular day. It's really not that hard you guys to get them going. The only place they eat for the first ten sessions or so is on the track. If they decide not to track that day...... they don't eat that day ...... or if they are still growing a half cup of food at dinner which is dumped in the grass for them to find.  They will be tracking intensely within a few days for hot dogs, rollover or kibble.
