I loved all my business trips to Dallas/Fort Worth area. Some of the best hole in the wall BBQ I've ever had anywhere. When at home, I like to use apple wood as it has a sweetness to it.
Back to turkey necks. Each of my dogs will get their raw turkey neck when I get home from my Thanksgiving dinner with family.

Oh, yes, apple wood. Tried it. It's pretty okay, but not my first choice. I'd describe it as sweet and "sooty", meaning the smoke tends to overpower the other flavors, so it becomes too smoky and "sooty". Would use it again, if hickory or mesquite is not available.
In regards to feeding turkey necks, go for it, you'll see your dog gobble it up. Same with any other bones, needs to be fed raw, chicken bones, venison, meaty beef rib bones, lots of raw garlic and yogurt in the meal, mackarel fish out fo the can, sardines out of the can, tuna fish out of the can, mashed (or shredded, or even just cut up small) carrots, onions, peppers, squash, cucumber, raw egg (with swuashed eggshell in the meal too - 3 times a week) etc... - all good. Not good, great!
