What's risotto?
I like tomaters green fried, green in soup, in stir fry. Freeze fresh whole tomaters green or ripe, then dead of winter chili drop whole frozen tomatoes in the pot.

I pickled green cherry tomatoes four ways last year. They were pretty good. Never thought to freeze them whole!
Risotto is the classic Italian rice dish that uses Arborio rice. Basically the rice is sauted in olive oil first, then a bit of white wine and chicken stock is added, and stirred bit by bit until it is absorbed and cooked to a wonderful creamy consistency. Many additions are common and mushrooms is a classic. It should be served immediately to be appreciated at its best.
