Cute pic Laura...I have a horrible time keeping Hexi out of my flower beds..she loves the cool sandy dirt these hot days...and she loves to dig herself a big hole..

My mint jelly did not set properly. I had a boil over and might not have used the correct pot. Going to go buy a new one, and try to "fix" this batch. Taste was good, but the consistency is more like a thick syrup instead of a clear solid jelly.
Second batch, I will try a different recipe. Everything needs to be perfect for the set, and it wasn't! The order is important, too, sugar then pectin or pectin, then sugar! Except recipes are not the same. So many variables!
I won't give up on this jelly business, just yet. I must master this skill now, I won't rest until I do.

Bee: My mint is in a copper bucket in a container with drain Should I go ahead and plant it in a partially sunny spot? 100* today and 113* in sun so a flowerbed in shade with some sun?
I water it daily as it is on patio where it gets sun and dries it quickly.

Mint spreads like crazy, so it you plant it in the yard, make sure there's a barrier. If you don't your yard will be covered!

Should I go ahead and plant my mint, BEE? It is in a pot and I use some daily..keep it pinched into my tea....lol
BUT I think a shady/part sun place would be better and water daily.. It is 100 * today in shade so 113* in sun Wow
HAd to move my million bells on patio...was scorching them even though they are suppose to be in sun 7 -8 hours...Texas is a hot spot right now..

My mint is in big pots, next to the herb filled raised bed. It gets part sun , part shade.... They like moisture, yes. If you want to use the leaves for infusions, etc. too.
I just made the second batch. Looks better already. I will post a pix in a few.
Now, I will attempt to fix the runny batch.
The one I just made is a rosemary, spearmint & wine jelly. Different pectin, and sugar was added, first!
The first batch one was champagne peppermint.
I.hope the fix works......
