Me too thinks that exercise will help in thightening her hock joints and sourounding ligaments. Hikes in steeper hills will do wonders. Nothing is lost yet, but you got to get going ;)

Her ears have been switching up and down consistently, she is still growing so I'm not too concerned about it. The one ear just stood up this month, the other shouldn't be too far behind judging from the past. But as for diet, I feed her high quality kibble once a day, and fresh human grade meat mixed with some veggies and oats 2x a day. The ear thing is a little annoying, but I'm just being patient.

When she runs does she bunny hop? (both back legs springing off instead of seperatly)

No, she runs with all four feet. She gets going pretty fast too. I took her to the beach tonight and let her run up the sand dunes. She loves the beach, so it's the perfect solution.
