E names can sometimes work too, just depends on how they sound, like Ember/Umber

Urko (say "er-ko")- Old family name is Urkowitz.  I knew a dog named Urbo.  The cross over on the "E" & "O" names is a good idea.

Ursula
Ursus
Ursa
Unkas (for the Last of the Mohicans fans)
Ultra
Upsilon (a greek letter)
Upsala (a place in Sweden)

Almost forgot my favorite "U-too"

Umber, which is masculine to Umbra, feminine.

Meaning "dark" or even "shadow".

Utoo is clever, but I would spell it U2!
Uke, short for Ukelele
Ullyses, call him Uly
