Ceph you are right.
Lean meat does not necessarily mean less tender. (Depends on how it was raised and prepared/cooked)(It will not survive the normal cook on high heat till well done (unless you like eating leather)... personally I like mine Med Rare w lots o' pink...mmmmmm (knock its horns off, slap its A$$ and two flips on the grill)
The marbleing is fat and affects palatability also helps aide in the cooking process. Yes we humans love our fat... most of us can tell the difference between a fat free vs standard product. Lets face it why else do we eat grocery items with lots of High Fructose, High Sodium, High Fat contents... cause we have grown to need them. Can't you tell the difference between Whole milk and Skim? Yet some people who have drank Skim will tell you they can't drink Whole and vice versa. If we were a nation who ate lots of lean meats we probably wouldn't want o waste our time on a nice marbled Porterhouse.
Speaking of Porterhouse, Ceph can you tell our readers why next time they should buy the 26oz Porterhouse vs the 12oz NY Strip or th 8oz Fillet when they cost nearly the same? Is it cause the Fillet is a better cut of meat?

do right, i have to admit it didn't even occur to me "angusmom" wanting a steak might be a bit odd; still, a steak and beer sounds much better than a salad and soda. besides, angus was named after angus young of ac/dc.
