First of all, everyone on here is right.  You should find another trainer.  Obviously he has no idea how to read a dog.  It sounds like you found yourself a scumbag only interested in your money. It's either that, or he has no clue whatsoever.

Secondly, If you wanted a protection dog, why didn't you go to some very nice working lines?  I wouldn't go out and buy a dog linebred on Mink to enter the show ring.

Trio to answer your question...I wouldn't start a dog in defense at any age.  It is a natural no no for dogs to put their mouth on a human.  Starting out putting a dog in a fight or flight you're taking a big risk of ruining your dog.  Sure your dog might bite...but you must ask why.  Is he going to bite with a confident calm firm grip?  I highly doubt it.  I don't know your dog but why start him like that. 

 I agree with SchHbabe, its a shortcut to get a dog on a sleeve, without regard for what's going through your dogs head.  I'd always start bitework as a fun game of tug with the helper and build his confidence and grip, why rush it IMO.

GSDfan, thanks for the feedback.  I was also thinking it was a strange way to start protection training, even if the dog is 3 years old. So far I have just been playing tug with the dog and he thinks it's a fun and wonderful game. He's a very friendly and social dog, I wouldn't want that to change by a misguided trainer.
