clc29, that sounds awesome! If you would PM the recipe....I promise I will make it! And post pictures. 
I only order them from this, just one, Mexican restaurant. It is in the "city", and that makes it, what I think is authentic. I've never tasted anything like their molé chicken enchilada, but it makes me swoon. You are in NM, right? I think I will double swoon, with authenticity!
It is hard to find a real, good fish taco on the East coast, too. IMHO.

Oh happy day! I just bought six poblano pepper plants and two tomatillo's, among others. This is something unheard of on the East Coast in years. Late planting, too. I wasn't greedy, I left two plants for someone else.

LOL @ Brynjulf! If you can't have steak then why go on? Who wants to live forever? Just sayin.
My favourite meal is grilled cheese (with real cheddar cheese and artichoke caponata) and tomato soup. I could eat it every day of the week.
