For an interesting perspective on the machinations of organized religion, parallel worlds in multiples, the origins of sin; the souls of humans visible, alive, and in the form of animals/birds/insects, and what happens to us when we die, consider reading the series "His Dark Materials", by Phillip Pullman. It consists of 3 books: "The Golden Compass", "The Subtle Knife", and "The Amber Spyglass".
Much more interesting daemons there. ;)

You got it hexe! He is indeed named after the daemon Pantalaimon (though when I search that name I can't find that it exists in any other context). I'm re-reading The Subtle Knife right now. Also, someone told me that "Pan" is a common name among Border Collie/herding folk, as the god Pan is the god of shepherds, so I figured that was also a suitable call name.

LOL you are the only person I've ever come across other then myself, with a dog named Pantalaimon. I love it! :D
