Not only do they follow your gaze and watch where you are looking but as alot of you know our dogs watch our every movement.  That's explained as well in the book.  Little things you do are big indicators to the dog, i.e. picking up keys, getting sneakers on, I see it in my dogs,  if I even get up a certain way  or move in a certain way they know where I'm going and do or don't follow.  It's really fascinating to me how well my dogs know me just by watching every little thing I do.

And, of course, our dogs acquire a vocabulary and understand some of the words we say (in addition to verbal commands for obedience).

Check out this dog's vocabulary:

JRANSOM,
That is so true. And especially when working a service dog. They watch, hear, feel, read your movements. Sometimes, even when the movements, (handler), are not exactly right.
