Bhall, I'd recomend the same to you. Hire a land use lawyer. He most likely doesn't need to go to the hearing with you, he could draft up something or give you guidence on how to handle it. Yes, it may be somewhat costly to you today, but in my experience it will be a slam dunk against a "laymen with biases and no legal represention" and they will eventually have to go away. Most complaining neighbors won't expect you to escalate and have actual legal representation. Sure they can escalate too, but in my experience it makes them think twice about how much "complaining and trying to win thier petty argument" is going to cost out of thier pocket. Right now it just costs them time, but bring a lawyer in and they will be out of pocket if they want to carry on with any chance.

I'm hoping to set up a hobby breeding situation in the next few years (well, buy the dogs, anyway- breeding will follow if they're up to snuff) but worry about nosy neuter Nazi people wanting to shut it down. I don't have the property yet or anything, just a plan I've had for a while. I'd like to know how to protect myself.
Should I consult a land use lawyer up front?
