Bob,

Moloukhia is a green vegetable, when cooked it looks closest to spinach, before cooking it just looks like soft grass but with leaves. It is well know in Middle East countries like Egypt, Lebanon, Syria etc. To the one not used to it, it looks odd to eat cooked sort of grass but it is so delicious when cooked with chicken or rabbits.
