Langhaar, I'd certainly agree with suet as a great fat supplement but that's far to good to give to the hound. Stew and suet dumplings, mmmMM!
We give ol' Nelson raw green tripe and this has a layer of fat around it that looks similar to suet... although I can't confirm the taste! The tripe also seems to give him a great coat plus he absolutely loves it.

GARD, I suggest animal fat from your bacon, and meats. Remember when Ruger was looking REALLY thin a few weeks ago? I used the greese from cooking to put a little extra on him. He looks great now and I do not need to continue. Just pour some over her kibble, but make sure it is still a little warm so it does not get clumpy.

An easy way to put weight on a dog is to simply add some canned food - gross but it works great to pack the weight on.

We have deal with a guy that does custom butchering. Most of the time, the people he cuts for don't want most of the organ meats and often he is generous in his trimming and leaves us pretty good amounts of meat on the fat he trims. Call around locally and I bet you can find a deal on fat (if not free, then close to it)
