Personally I'd try to keep two -- I'd want a female for working on my lines, and then a male because they are easier to train (my female comes in every four months....NIGHTMARE for training.)

keep back one of each, then whichever one shows the greatest potential, keep that one. but my choice would be a female. just because they can be more productive in the long run.
