I agree most of the prime/choice US beef is exported, then we import what we eat here..... But to generalize and say humans don't eat the double muscled meat or extra lean meats is incorrect. Many people do chose the extra lean meats over regular beef sold in store, that's part of the reason buffalo and venison is so popular. A big reason many people that try it and don't like is they don't know how to cook the extra lean meats correctly and incorrect cooking can cause it to be tough and tasteless, quickly. Meats full of fats (marbling) are easier to cook and the fat itself is tender.
I'm just saying don't generalize so much, there are always exceptions.
BTW, I'm from a multi generation cattle ranching family........ And have raised some homegrown beef (and lambs). Grass fed, heavily muscled, lean meat.

I am not generalizing - I am telling you that the USDA grades double muscled cattle as US inferior - which is lumped in with unhealthy or unthrifty cattle. I wasnt talking about sheep or pigs - they dont grade either of those on this system...but all double muscled cattle are lumped with US Inferior. Humans in the United States dont eat feeders that are labeled US Inferior. If you google US Inferior the USDA manual for grading should show up. The USDA doesnt make exceptions to that system.
We actually produce a rather large portion of our lean meats as well...we dont do a whole lot, if any export to Europe...so what select we do breed here stays here typically. The really lean meats usually go to South America.

Ceph knows her stuff, I'll take a nicely marble beef for the Bar B Q any day, no marinade necessary. Reminds me of people who insist bluefish tastes great, but only after you submerge it in mayo prior to cooking it.

Disgusting that we breed living things to eat. But, what are ya going to do? Can't wait until the Martians come here to breed and eat us. Then we will know how it feels to be food.

Mahon can tell us about Marbleing and top bull Angus since that is his business. Maybe he will lend a hint or two...Bought a steak Black Angus with a guarantee.
It was tender and tasted good and Mahon told me to get the one with the most marbeling so I did ...first good steak I have had in years. I was ready to take it back but surprised to find out it was the best..
dont eat steak very often.
