Hawaiian Cheesecake Bars
Ingredients:
2 cups flour
1 cup sugar
1 cup butter
16 ounces cream cheese
4 TBS sugar
4 TBS milk
2 eggs
2 tsp vanilla
16 ounces crushed pineapple, drained
2 cups flaked coconut
2 TBS melted butter
Directions:
1 - Combine flour, 1 cup sugar and 1 cup butter. Pat mixture into ungreased 9 X 13 pan. Bake at 350 oven for 14-19 minutes. Cool slightly.
2 - Mix together cream cheese, 4 TBS sugar, milk and eggs. Fold in vanilla, and drained pineapple. Spread over baked crust.
3 - Combine coconut and 2 TBS melted butter. Sprinkle over pineapple layer filling. Bake 350 for 15-20 minutes
4 - Cool and cut into desired size bars .

Libby's (the one who has the canned pumpkin) came out with a packaged pumpkin cheese cake. I tried it; very good. Find it in the alise that has the canned pie fillings.
Another yum: Add a touch of instant coffee to your pecan pie recipe. Makes it very good.

One of my favorites during wintertime: Common mussels = my dinner last night
Sweat one onion, 2 cloves of garlic, 2 carrots, 1/2 leek, 2-3 tomatoes, 1/4 celery in some oil, fill up with a small can of mashed tomatoes, 2 TSP balsamic vinegar, salt, pepper, one chili, thymian, and 2 bay leafs - let the whole stuff simmer for a while ( 15 min ).
Put the cleaned and rinsed mussels in it for about 8 minutes.
Only a spoon, some fresh white bread and a glass of white whine - bon appetit !

I have a recipe that's quick and easy, start to finish, approximately 2 miutes, honest.
1 cake mix, any flavor
1 angel food cake mix
Mix the two mixes together in a gallon zipper bag and store for instant use.
Place three tbsp of the mix and two tbsp water into a coffee mug or tea cup. Mix well with a spoon, microwave 1 minute
It's best if you let it cool, but can be eaten hot.
No fat, no mess and it's a quick snack when the cupboards are bare. And you don't have to be a good baker, it's foolproof. Okay, now I have to make a biased statement, just because! So easy, even a man can't mess it up :)
I sometimes sprinkle two or three bittersweet chocolate chips on top while it's hot and let them melt in. You can top it with fruit, frosting, anything you want, or you can just eat it plain. Is it the best cake I've ever had? No. Is it the worst cake I've ever had? Not nearly. It's better than a Hostess HoHo :)
My personal favorite is spice cake with a bit of cream cheese.

Sounds like a yummy snack Travels, except I don't have a microwave.
I'll have to tweek it a little, and try it in the oven.

Once, on a dive trip, our divemraster brought back a conch from one of the fishing boats (it was in season) and the chef at our resort made a conch salad (a friend still has the shell) sea to table in 15 minutes. It was a good, spicy dish, but I never would have been able to kill it. I've never been able to kill things, I even save spiders :) I do understand that life is about death, I just don't want to parttake in the killing and I don't like watching something die. I imagine if I had to, I would kill animals for survival, but...
I do have a confession to make, I flush stink bugs and I smash millipedes, the ones that run at warp speed. Those are the only things I actually kill on purpose.
