I have a wonderful recipe for zucchini/yellow squash soup, but I'm in the process of moving and I have no idea where it is!  When I find it, I'll forward it.  Best thing about it is, it's a basic recipe and you can add or subtract things you do and don't like and it's a great, light summer soup, ready in about 30 minutes.

My grandmother used to plant WAY too much zuccini. Hence, the recipe boxes she left (stored back in PA right now)  have dozens of recipes for the stuff. I couldn't look at it after childhood for decades, till I was in my 40's, LOL, but the latkes sound great, especially with tzalziki!

Grandma's Zucchini Cake

2 eggs
1 cup sugar
2/3 cup vegetable oil
1 1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup grated carrots
1 cup grated and drained zucchini
1/2 cup chopped nuts

Frosting

3 oz. softened cream cheese
3 Tablespoons margarine/butter
2 cups confectioners sugar
1 teaspoon vanilla extract

Preheat oven to 350*

In a large mixing bowl, beat eggs with sugar until frothy. Gradually add in oil. Add in dry ingredients. Beat at high speed for 4 minutes. Stir in carrots, zucchini, and nuts. Pour into a well greased 9 inch square pan. Bake about 35 minutes or until top springs back when lightly touched.

I doubled her recipe, using a scant 2 cups sugar in all, (seemed like alot) and baked it in a bundt cake form. And instead of using her cream cheese frosting I made a simple glaze to drizzle on top. It looked pretty, too. To make a glaze use confectioners sugar, a bit of milk and a touch of vanilla, beat well until you get the right consistancy. I kind of just wing that one.

Bake 45 minutes or a bit longer until done.

Actually, I bragged about the taste on the Internet Arguement thread and someone asked for the recipe. So, I thought I'd just put it up here. If you like carrot cake you will like this cake.

My wife loves carrot cake, she just doesn't like to cook. Will definetly show her the receipe.

  I love carrot cake...or almost any cake..   ITALIAN CREAM .....

  Well,   Ice cream time in TEXAS

  we are having a WATER shortage so to stay COOL  I am eating ICE CREAM     3 Xs a day..

    Zucchini and Eggs....

    Zucchini
    Garlic
    Onion
    Butter     
---------------Saute all in frying pan...then crack a few eggs in ...scramble together....

                   Eat on fresh Italian bread...Enjoy!!!.....: )
